Pound Cake, Anyone? Yum!

Dessert doesn’t have to be a difficult, time-consuming chore. You can make a quick pound cake with stuff you already have in the pantry! And you can top it with fruit, jam, powdered sugar, caramel, just about anything you have handy.

Don’t skip dessert! Life is too short!

POUND CAKE RECIPE

In a mixing bowl, combine:
1 cup of flour
1 cup of sugar
1/2 cup of oil
1/2 cup of milk
2 eggs
1 Tablespoon of vanilla
Pour into a 9×13 baking dish (I spray mine with cooking spray)
Bake at 350 degrees for 35 minutes.

Wow, that’s easy, and so, so good. The top becomes a little layer of crispness and the inside stays moist.

If you want to top with fruit, sprinkle your fruit with some sugar in a bowl and place in the fridge while the cake is cooking. This is the perfect cake for strawberry short cake. I drizzle with chocolate syrup and top with whipped cream.

If you don’t have any fruit handy, try topping with a caramel drizzle. While the cake is cooking, combine in a sauce pan 1 cup of brown sugar, 1 stick of butter, 1/4 cup of milk or cream. Bring to a boil and stir until sugar is dissolved (about 5 minutes). Remove from heat and add 1 teaspoon of vanilla. This caramel drizzle will thicken as it cools and keeps in the fridge for several weeks if you don’t use it all. (Also good for apple dipping!)

If you don’t have fruit and don’t want to make a caramel drizzle, just sprinkle with powdered sugar. It’ll be beautiful and simple, and everyone will want seconds! I pinky swear!
